- Pumpkin supports digestion and adds natural sweetness.

- Cranberries provide antioxidants and a festive flavor (when used in moderation).
- Eggs: Protein for strong muscles & shiny coats
- Coconut Oil: Healthy fats for skin & coat shine
Holiday Carob–Pumpkin Cranberry Cookies
Ingredients (Makes ~20 small cookies)
1 cup whole oat flour (or blended rolled oats)
½ cup pumpkin purée (plain, unsweetened)
1 tbsp carob powder
1 large egg
2 tbsp unsweetened dried cranberries, finely chopped
1 tbsp coconut oil, melted
1–2 tbsp water, as needed
Instructions
1. Preheat and Prep
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
2. Mix Wet Ingredients
In a medium bowl, whisk the egg, pumpkin purée, and melted coconut oil until smooth and creamy.
3. Combine Dry Ingredients
In another bowl, stir together the oat flour and carob powder. Add the chopped cranberries to the dry mix so they distribute evenly.
4. Bring It All Together
Pour the dry ingredients into the wet mixture. Stir until a soft, sticky dough forms. If it feels too dry, add 1 tbsp of water at a time until it becomes pliable.
5. Shape the Cookies
Scoop small teaspoon-sized portions and roll them into balls. Flatten slightly with your fingers or a fork to create cute cookie shapes.
(Optional: Use a mini holiday cookie cutter for festive shapes—just roll the dough between parchment sheets!)
6. Bake
Bake for 18–22 minutes, or until the edges feel set and the bottoms are lightly golden.
The cookies will firm up as they cool.
7. Cool and Store
Let cool completely. Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
Enjoy!
